Sweet Potato and Carrot Soup with Zucchini Grilled Cheeses

Whenever I am craving comfort food for dinner, grilled cheese and tomato soup ALWAYS comes to mind. It’s so simple, I almost always have the ingredients and it never gets old. This past week, I decided to give this dish a makeover as a treat to my buds (taste buds, that is). I made a Fried Zucchini and Havarti Grilled Cheese with Sweet Potato and Carrot soup. And wow, this recipe totally killed it.


Sweet Potato and Carrot Soup:

  • 3 Sweet Potatoes
  • 1 lb Carrots
  • 1 Onion
  • Chicken Broth
  • 1-2 cups of water (depending on desired thickness)
  • Juice of 1 Lemon
  • 4 cloves of garlic
  • Cinnamon
  • Cajun seasoning
  • 1 cup Greek yogurt
  • Salt/pepper to taste

Boil sweet potatoes, carrots and onions until fork tender. Throw all ingredients into a food processor. Season to taste.


Fried Zucchini:

  • 3 small Zucchini’s, thinly sliced
  • 1 Egg
  • 1 Egg White
  • ¼ cup Flour
  • ¾ cup Bread Crumbs
  • ¼ cup Parmesan, finely grated
  • ½ ts Garlic Powder
  • Salt and Pepper

zucgrilledcheeseWhisk together egg and egg white in one bowl. In a separate bowl, mix the breadcrumbs, flour, parmesan, garlic powder and salt and pepper. Dip each zucchini slice into egg mixture, then coat with the breadcrumb mixture. In a large skillet over medium heat, add olive oil and fry the slices until both sides are medium brown.

Grilled Cheese:

  • Whole wheat bread
  • Havarti cheese
  • Coconut oil or butter

Spread one side of each bread slice with coconut oil. Layer havarti cheese and zucchini slices inbetween each slice. Place in skillet over medium heat and cook until cheese is melted and both sides are toasted to your liking!


Now, for the marriage of the two…Dip your swagged out grilled cheese into the bowl of sunshine and fall out of your chair from amazement. Be careful though, don’t hit your head!

  1. Yes! Grilled cheese and Tomato soup are my favorite! I’ll have to try this Sweet Potato and Carrot Soup with Zucchini Grilled Cheese sometime. Nice layout and display too!
