Matcha Oatmeal Pancakes

Don’t get me wrong, plain ‘ol pancakes rock my world. But sometimes spicing up a simple dish, especially in the morning, can be all it takes to manifest positivity in your day to come. For some unknown reason, my pantry is overflowing with all different types of oatmeal. And when I wake up to 90+ degree weather, hot oatmeal is the last thing that I would choose to cook for breakfast. For the past few weeks, I’ve had a pack of Matcha Marketplace Apple Cinnamon oatmeal staring me down every time I open the pantry so I figured it was time to put it to use.

The recipe is so simple. All you need is:

  • Flapjack mix (I use Whole Grain Kodiak Cakes)
  • Matcha Marketplace Apple Cinnamon Oatmeal (Found at AJ’s or Whole Foods)
  • Coconut Oil
  • Peanut Butter (Justin’s is my FAV)
  • Syrup

I would give you measurements but I find that when I cook, I do it all according to my preference. Thickness of pancake, ratio of oatmeal to mix, amount of peanut butter or syrup — it’s different with each person. Make it how you like!

The process is just as simple as the recipe. Make pancake mix. Add in oatmeal packet. Be sure to save a little to sprinkle as a garnish for the finishing touch at the end. Add coconut oil to skillet. Make 4-6 small stackable pancakes. Stack onto plate. Drizzle with peanut butter. Sprinkle leftover oatmeal as garnish. Generously drizzle syrup over the tower of goodness. Chow down.
